Cornstarch in a Gluten Free Diet

January 1, 2010

Being on a gluten-free diet can be a bit of a nuisance at times. However, if you learn some tricks of the trade when it comes to gluten-free cooking you can be enjoying food again quickly. There are some very simple things you can do in order to cook some recipes that are not specifically gluten free. Here are some tips when it comes to gluten-free cooking.

If you are cooking soups, pies or sauces use cornstarch when the recipe calls for a thickener such as flour. Gluten free flour does not seem to work very well as a thickener when cooking. If the recipe you are making calls for six teaspoons of flour, you use three teaspoons of cornstarch. For the best results, make sure to mix the cornstarch with a little bit of water before adding it in. This will ensure the best results.

When you are cooking with cornstarch makes sure to cook over a low or low to medium heat. If you cook over a high flame you might find that the cornstarch lumps up. Another thing to remember is that when you are cooking with a substitute such as cornstarch, is to avoid making large batches of soups or sauces. Foods cooked with cornstarch instead of flour, such as a celiac bread soy recipe, tend not to freeze very well. It is suggested that you cook as you go and not to make too much extra.

When cooking with gluten free flour in a recipe that calls for a sifter, it is not advisable for you to use a sifter that has been used for regular flour. Do not worry. You do not have to go out and buy a new sifter. Simply put the gluten free flour in a strainer and slide it side to side. This will be more than sufficient to satisfy your sifting needs.
